Support for custom control keys should be added because the default keys can sometimes be inconvenient and all over the place.
The idea of using the many hotkeys using F1, F2 F3, and etc... to change weapons is great but, can an option of 2 buttons for "next weapon" and "previous weapon" be added

That's a good idea...
There is 2 interesting ideas in your post
1) add control to get previous/next weapon
2) allow to change keys (that is already on our tracker, here : http://gna.org/task/?6389
Unfortunately, adding a menu to change key is currently quite difficult (we must really change the system to create menus before doing more menus).
But the first idea is easy to implement, what would be good default keys for previous/next weapon ?

p for previous
n for next
for example
n for next

Actually, it would be better if those types of keys are closer, say q or 1 for previous weapon and w or 2 for next weapon.
There is no harm in stealing ideas from other proprietary freeware games like gunbound. =)

Hum, q and 1 are near only in qwerty... same for w and 2.
But what for those that are using azerty ? dvorak ? bepo ? I'm afraid using such keys is not a good default solution.

Good point, but having the keys as F1, F2 and F3 does seem weird. Not sure if this is a good suggestion or to be selfish at all but, maybe the numbers 1 and 2 being used for previous and next weapon? At least those two keys are next to each other.
